<p>I learned that this comes from a compound called Pyrazines. While some might find it unusual, it is exactly what makes Carmenere so special! <p>This is the part I love the most. Carmenere was originally one of the noble grapes of Bordeaux, France. However, in the mid-19th century, a tiny pest called Phylloxera destroyed almost all the vineyards in Europe. Carmenere was thought to be extinct because it was so difficult to regrow in the French climate. <img src="https://s.w.org/images/core/emoji/17.0.2/72x72/1f342.png" alt="🍂" class="wp-smiley" style="height: 1em; max-height: 1em;" /></p>



<p>But there was a twist! In 1994, a French scientist named Jean-Michel Boursiquot was visiting Chile. He noticed that some of the &#8220;Merlot&#8221; vines looked&#8230; different. The leaves were a different shape, and the grapes ripened much later.</p>



<p>DNA testing revealed the shocking truth: it wasn&#8217;t Merlot at all. It was the long-lost Carmenere! <img src="https://s.w.org/images/core/emoji/17.0.2/72x72/1f48e.png" alt="💎" class="wp-smiley" style="height: 1em; max-height: 1em;" /></p>



<p>For over 100 years, Chilean winemakers had been growing Carmenere, thinking it was just a strange, spicy version of Merlot. Once the secret was out, Chile embraced it as their signature grape, turning a &#8220;mistake&#8221; into a national treasure.</p>
