While most white grapes are green, these have a dusty, pinkish-gray hue. This is why some Pinot Grigios have a very faint &#8220;copper&#8221; or &#8220;onion skin&#8221; tint!</p>

<li>Anything with Tomato: This is a match made in heaven. The acidity in the wine mirrors the acidity in the tomatoes. A classic Margherita pizza or a rich Bolognese pasta is the way to go.</li>



<li>Grilled Meats: It’s the perfect companion for a juicy steak. In Tuscany, they swear by pairing it with Bistecca alla Fiorentina (a thick T-bone steak). <p>The name itself is quite dramatic. It comes from the Latin Sanguis Jovis, which literally means &#8220;The Blood of Jove&#8221; (Jupiter). Imagine a grape so vital that ancient Romans named it after their king of gods!</p>



<p>One thing I find fascinating as a student is how much of a &#8220;chameleon&#8221; this grape is. It changes its name depending on where it’s grown in Italy. In the town of Montalcino, they call it Brunello. In Montepulciano, it’s known as Prugnolo Gentile. It’s like a famous actor who uses different stage names depending on the movie!</p>



<p>Perhaps the most rebellious chapter in its history is the &#8220;Super Tuscan&#8221; movement of the 1970s. Back then, Italian wine laws were very strict. Producers who wanted to make higher-quality wine by blending Sangiovese with grapes like Cabernet Sauvignon were told their wine wasn&#8217;t &#8220;official.&#8221; They did it anyway, creating legendary wines like Tignanello that eventually became some of the most expensive and sought-after bottles in the world. <img src="https://s.w.org/images/core/emoji/17.0.2/72x72/1f377.png" alt="🍷" class="wp-smiley" style="height: 1em; max-height: 1em;" /></p>
