<p>The most fascinating part about Corvina is how it’s treated after harvest. Experts say the best Corvina grapes are placed in <strong>&#8216;Fruttai&#8217;</strong> (drying rooms) on bamboo mats for over 100 days.</p>



<p>This is the <strong>Appassimento</strong> process. During this time, the grapes lose about 40% of their water. <strong>&#8220;As the water evaporates, the sugars, acids, and flavors become incredibly concentrated,&#8221;</strong> they say. Imagine the difference between a fresh grape and a raisin—now imagine making wine out of that intensity!</p>

<li><strong>Recioto:</strong> A sweet dessert wine where fermentation is stopped early.</li>



<li><strong>Amarone:</strong> A dry, high-alcohol wine where every bit of that concentrated sugar is fermented away.</li>
</ul>



<p>It takes immense patience. The fermentation alone can last 30 to 50 days because the juice is so thick and sugary. It’s truly a labor of love.</p>

<p>Corvina is the undisputed king of <strong>Veneto</strong>, specifically the <strong>Valpolicella</strong> zone near Lake Garda. The lake acts as a giant radiator, keeping the climate mild enough for the grapes to ripen perfectly.</p>



<p>It is almost always blended with <strong>Rondinella</strong> (for color) and <strong>Molinara</strong> (for acidity), but Corvina is always the star of the show.</p>
